 1 egg yolk
 1 tsp Dijon mustard
  cup lobster oil
  cup canola oil
 ½ lemon juice
 salt
 pepper

In a bowl, mix the egg yolk and Dijon mustard with a whisk.

While mixing, slowly add the canola & lobster oil until it becomes thick.

Finish with lemon juice. It will keep in the refrigerator for one week with a cover.
